As luck (or weather) would have it, there is something special about the Russian constitution. They seem to be able to indulge their famous sweet tooth without carrying any evidence of it around their middles!.

Perhaps it is the extreme temperatures that result in most of the carbohydrates being burnt off keeping warm or cool. No such luck for us Kiwis!

Russian cooking includes many sweet dough based recipes which are either baked in the oven or fried. These are cooked plain or with fillings of nuts, fruit or tvorog - a soft cheese similar to quark or ricotta.

 


Vatrushki - sweet cheese tartlets are made from cottage cheese, raisins with a touch of rum.
