12 medium sized potatoes.
4 eggs.
2 cloves garlic.
1 large onion (or 2 small).
1/2 cup flour.
1/2 tsp baking powder.
salt and black pepper.
Method:
Wash, peel and grate the potatoes
finely. Finely chop or grate the onion. Both can
be done in a food processor for convenience. Combine
the processed potato and onions, and mix in the
remaining ingredients, seasoning with salt and
pepper to taste.
Preheat a frying pan on a medium heat and add
just enough olive oil to cover the base of the
pan. When olive is hot, add mixture a tablespoon
at a time to the pan, forming small individual
patties. Cook both sides until golden, and patties
are cooked in the middle.
Serving
Serve hot sprinkled with garlic sauce and topped
with sour cream.
Serves 6-8.
