Tvorog Biscuits

Ingredients:

150g soft butter.
1 cup sugar.
400-500g tvorog.
2 eggs.
1 tsp vanilla essence.
2 cups plain flour.
2 tsp baking powder.
1/2 tsp salt.
1 lemon.

Method:

In a food processor, beat together the butter and sugar until creamed. Add the tvorog and continue mixing until smooth.

Add in the eggs and vanilla essence. Process until combined. Mix in the juice from one lemon.

In a separate bowl combine together the flour, baking powder and salt. Gradually add this to the main mix a little at a time, processing between each addition.

Preheat the oven to 180 degrees C.

If your mix is firm enough to handle, shape it into small balls and place onto a greased or lined baking sheet. If it is still quite soft you can drop spoonfuls of the mixture onto the baking sheet.


Bake in a medium oven, 150-180 degrees for 10-15 minutes.


 


About this Recipe:
Making your own soft cheese (tvorog) is easy, but things can still go wrong. If you leave the mix too long in the first stage it can become bitter. But before you give up on it, the tvorog can still be made and baked into biscuits.
The is a recipe for a soft light biscuit with a delicate lemon flavour, adapted from a recipe supplied by my friend Evgenia.
