Soft Sweet Cheese Pancakes
Tvorozhniki

Ingredients:

450g cottage cheese.
1 tbsp plain flour.
1 large egg.
pinch of salt.
1 tbsp sugar.
1/2 tsp vanilla essence.
Grated rind of 1 small lemon.
Extra flour.
40-50g butter.
Sour cream (optional).
Fresh fruit or conserve.

Method:

Preparation
Spoon the cottage cheese into a cheesecloth and place in a colander allowing the liquid to soak out overnight. Place a pad of kitchen paper towels or tea towels in the bottom of the colander to help draw the moisture out.

Sieve the flour into a large bowl, then force the drained cottage cheese through the same sieve into the bowl. Add the egg, a pinch of salt, the sugar, vanilla essence and lemon rind. Stir to mix well. If the mixture is still very wet, add a bit more flour.

Cover the mixture and chill for 2-24 hours.

Cooking
Take a tablespoon of dough and roll into a ball on a floured board. With well floured hands, pat each ball of dough into a flat pattie. As you are doing so, brush off any excess flour.

Melt the butter in a frying pan and add the patties. Cook until golden on both sides. Keep warm while you cook the remainder of the patties. Serve with sour cream, fresh slices of fruit or fruit conserve.


 


About this Recipe:
These pancakes have a golden crust and a soft creamy inside. They make a great treat for Sunday brunch.

They are also known as syrniki - syr being Russian for cheese.

The recipe comes from Susan Ward's cookbook ‘Russian Regional Recipes’ and are on the breakfast menu of popular hotels in Moscow and St Petersburg.
