| Ingredients:
3 eggs.
1 tbsp sugar.
3 tbsp plain yoghurt.
300ml milk.
3 cups self raising flour.
1/2 cup boiled water.
Canola oil for frying.
Please note that the amounts in
this recipe are not exact. Amounts depend on the
consistency of the mixture as it is made.

Method:
Break the eggs into a blender and
add in the sugar, yoghurt and milk. Blend until
mixed.
Put the flour into a large mixing
bowl and make a well in the middle. Add the liquid
mixture into the flour. Add in enough boiled water
to make the mixture slide easily off the spoon
- approximately 1/2 to 1 cup. Mix well to combine.
The mixture should be heavy and
wet. If it is too thin add in more flour. If too
thick, add more milk.
Using an electric beater, beat the
mixture until smooth.
In a large flat based pan or electric
frying pan, cover the bottom with about 4mm of
canola oil and heat on a medium low setting.
Add spoonfuls of mixture to the
hot oil and cook until lightly golden on both
sides. Remove from the pan and place on paper
towels to absorb any excess oil.
Serving
Serve warm with sour cream,
golden syrup, jam or condensed milk.
