Salad Olivier
Olivier salat

Ingredients:

4 carrots.
4 potatoes.
3-4 hard boiled eggs.
1 onion - spring or white.
3-4 gherkins.
1 can green peas.
2 ‘handfuls’ of shredded ham.
“Best” brand egg Mayonnaise (Canadian) or homemade mayonnaise.

Method:

Cook the carrot and potatoes (don’t peel), and cut into cubes when cold. Cut the onion into small pieces. Cut the eggs, drain the juice from the peas, slice the ham into strips, then mix all ingredients together with the mayonnaise.


 


About this Recipe:
There is mixed opinion about the origins of this recipe, but most agree it was the creation of a French chef, Monsieur Olivier, who lived and worked in Russia. Some believe he was Czar Nicholas II's Chef at the Winter Palace in St Petersburg. Others say he lived and worked in Moscow at "The Hermitage" restaurant.

Like many Russian recipes, it really is a one dish meal. If you have kids who refuse to eat their veges then try this salad. They'll probably even lick the bowl clean!
