Honey Mousse

Ingredients:

3/4 cup honey.
4 eggs.
1 cup whipped cream (optional instead of using egg whites).

Method:

Separate the yolks for the whites. Add the yolks to a saucepan and beat, then gradually add in the honey.

When completely mixed, cook over a low heat, using a SimmerMat to control the level of heat. Stir constantly until thickened. Remove from the heat and cool.

Beat the egg whites, or cream, until stiff and fold into the honey mixture. Mix thoroughly. Spoon the mixture into serving dishes and chill before serving.

Serving
Serves 6-8.


 


If you love honey and have a very sweet tooth then this dessert is for you. Plus it is very simple to make.

The original recipe called for 1 1/4 cups of honey but I have cut it back. Use whatever flavoured honey you like but remember the stronger it is the richer the flavour. This dessert is not for the faint hearted!
