3 eggs.
6-8 cooking apples.
1/2 - 3/4 cup sugar.
1/2 cup flour (white or wholemeal).
1/2 tsp baking soda.
A few drops of vinegar.
Method:
Peel and cut the apples into small
chunks. Place in a bowl and sprinkle all over
with cinnamon.
Beat together the eggs and sugar.
Neutralise the baking soda by pouring
a few drops of vinegar onto the soda. It will
bubble and turn into a paste. Mix the soda paste
in with the eggs and sugar.
Sift in the flour and mix until
combined.
Grease the sides and bottom of a
20-24cm round loose-bottomed baking dish or cake
tin. Pour one third of the mixture into the bottom
of the baking dish and top with a layer of apple.
Repeat these layers, finishing with the apple
on top.
Heat the oven to 200 degrees C.
Bake for 20 minutes before checking if fully cooked.
If not, reduce the oven temperature to 180-200
C and cook for a further 10 minutes. If the top
cooks too quickly, cover with foil.
About this Recipe: This is a deliciously moist
light apple sponge cake.
It uses baking soda which has been
nutralised by adding a few drops of vinegar. I've tried
the same recipe using baking powder instead but the
result was a flatter cake.
